When you want something: light and fresh :)

The different greens are the perfect foundation for the star of this salad- the zesty lemon cucumber- while the hemp seeds and white mulberries add crunch for knockout supporting roles. The aged balsamic ties everything together.
There is a typical salad formula I follow and I don't recommend feeling tied to certain ingredients- I always recommend tapping into your own intuition to prepare what your body is asking for as well as with whatever is in the box for that week. I start with selecting a few leaves of whatever green deliciousness has arrived in the CSA, add it with a veggie or two (in this case, lemon cucumber; other times, tomato, onion, avocado, beets), along with a few ingredients to add crunch (seeds, nuts, goji berries, or white mulberries), and aged balsamic. This is a lighter salad for me that my body was asking for, but I usually want something a bit more filling and in that case, will add beans or lentils (that I make incredibly easily from dried in the instant pot), tempeh or tofu, along with an air fried or baked sweet potato. Whoever hasn't tried a potato in a salad is missing out!
